Kaffir Lime Curry Chicken
My trip to Thailand is a memory that stays on my mind, in the best possible way. I still think about the food, from rustic stalls on roadsides and tiny cafés to meals in people’s homes. The flavors also stay with me, especially lemongrass and kaffir lime leaves, and the mint, cilantro, Thai basil, and many other herbs that make Thai food so memorable. This recipe takes me back to Thailand every time I make it.
3 pounds boneless, skin-on chicken thighs
■ 2 tablespoons Curry Salt (this page)

5 kaffir lime leaves, coarsely chopped
■ 1 cup Lemongrass Chili Sauce (this page)
